Universities as catalysts for sustainable development: USU’s evidence-based pathway to nutrition, food safety, and public health

Purpose: This study positions Universitas Sumatera Utara (USU) as a catalyst for sustainable development by translating local evidence into community models that can be replicated to address SDG 2 and SDG 3.
Design/Methodology: This study synthesizes USU-affiliated studies and community engagement in North Sumatra, integrating food security, nutrition interventions, food safety surveillance, public health targeting, and farmer empowerment into a living-lab pathway.
Findings: Sustainable food security requires availability, distribution, affordability, dietary quality, safety, monitoring, and community adoption. USU acts as a connector between evidence, policy, and practice.
Originality: The proposed model redefines the university’s role from producing research outputs to designing evidence-based solutions that communities can adapt and replicate.
Limitations: Longitudinal impact data and standardized indicators for replication are currently limited.
Practical Implications: The proposed pathway can guide government, WASD, and communities in scaling nutrition-sensitive, safe, and measurable public health interventions.
